Menu Plan Monday on a Tuesday.

Ok, I did actually write it on Monday, but it turned into Tuesday before I got around to posting it! It is still Monday in some parts of the world!

Monday: Cold chicken, salad, bread rolls.

Tuesday: Spaghetti Bolognaise

Wednesday: My birthday dinner! Lamb shank casserole, potato bake, beans followed by a strawberry and cream cake

Thursday: Steamed fish with Couscous

Friday: Grilled Maple chicken, baked potato with cottage cheese, steamed vegies

Saturday: Steak (sausages for kids), mashed potato, vegies

Sunday: Roast lamb, mashed potato, steamed vegies, gravy

Friday's dinner sounds especially divine.

I had couscous for the 2nd time last week. I forgot how good it tasted. And apparently it is easy to make.

What is your maple chicken recipe?

I confess, though, that I've never heard of baked potato with cottage cheese.

The cottage cheese is a Weight Watcher's idea, much healthier than the sour cream I'd prefer. I mix the cottage cheese with a bit of parmesan cheese and chopped shallots (green onions?)

The maple chicken is simply a marinade equal parts maple syrup and soy sauce. I use thigh fillets.
